Loquat Strawberry Pie

Loquat Strawberry Pie - This tangy pie requires a pre-made pie shell. Total time - 1 hour 45 minutes to 2 hours.

Ingredients for the filling:
  • 4 cups quartered and seeded loquat
  • 1 cup sliced strawberries 
  • 1 cup sugar
  • 1 tsp salt
  • 3 Tablespoons flour
  • 1 tsp cinnamon 
  • 1/2 cup water (plus 1 Tablespoon lemon juice)
Combine all the ingredient in a medium saucepan. Slowly bring the mixture to a boil and let simmer for 15 - 20 minutes (stir frequently). Once the filling has thickened, let it cool and pour the filling into a pre-made pie shell. Bake at 450 for 10 minutes and 350 for 30 minutes.
