Mango Bread recipe

Quick breads are a great way to use local fruits and vegetables. This quick bread recipe is based on Dodi Manaba's recipe in the Molokai Catholic Community Cook Book (2003). The recipe is as follows:

  • 2 cups flour
  • 2 teaspoon (tsp.) baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt (we use Hawai'ian rock salt)
  • 1 1/2 cup sugar (Natural Cane Sugar)
  • 2 whole eggs
  • 2 cups diced mango
  • 1/2 cup chopped nut (Roasted mac-nuts)
  • 3/4 cup vegetable oil.
  • Pre-heat oven to 350 F
First, mix the sugar and vegetable oil together and add the eggs one at a time. Make sure that this mixture is well mixed (about 2-3 minutes on medium speed).

Next, add the flour, baking soda, salt, and cinnamon and continue mixing until a smooth batter forms(2-3 minutes on medium speed).

Below is the mango, peeled and diced along with chopped mac-nuts.

Then the mango and nuts where added to the batter. At this point it is important to scrape the bottom of the bowl.

This is the mango bread in a well greased dish, right before it goes into the oven (350 F) for about an hour or until the center of the bread is dry.

Just about an hour latter the Mango bread is golden brown and ready.
